  1. Steam your cauliflower in a microwave bowl with 2 tablespoons of water and a cover, you can use clingfilm or a steamer if you prefer. It should take 5-8 minutes in the microwave and 8-10 on the stove. Whilst that's steaming away you can cook your pasta of choice. In a medium saucepan fry off your onion and crushed garlic, Once your cauliflower has steamed, add it to your garlic and onion. Now you can create your sauce, add your almond milk (or milk of choice) I like sweetened soy milk., switch off the heat and using a hand blender blitz the cauliflower until smooth. Add in your xanthan gum and slowly bring your cream sauce to the boil and thicken until desired texture is achieved. Add in your Mustard towards the end, as much as desired. I recommend 1tsp.
Recipe Notes

I really recommend the smoked paprika on top, for those of you who choose not to eat meat it really is a great replacement for bacon (Asda also sell bacon bits that are 100% vegan)
