Cook all of your veggies excl; Broccoli, Cauliflower, Sweet potato.In a large pan with your spices until soft and the majority of the water has evaporated //It should be fairly 'curry' like at this state. (the water is nessesary to cook all of the vegetables through).
Add your fragile veg at the last minute so they can take on the flavours but not get 'crushed' into the sauce. Garnish with coriander.
