You may have spotted some cheeky snaps of Manuka Honey over on my Instagram..that’s because the lovely PR team at Holland and Barrett treated me this spring to two jars of honey.

Initially I was asked just to write up a smoothie recipe but you know me, I’m not one for smoothies, they’re too sugary and they remove the fibre, who wants that??
Well, Apparently a lot of people did! So I’ve included one to keep you all happy, but I’ve stamped my feet and created some recipes I really love to go along with it.
Firstly, Watermelon-ade.
It’s a spin on the classic lemonade but it’s much lighter and fresh tasting, like a sweet and fragrant cucumber water, but pink! Don’t you think that anything pink makes you feel a lot more summery? I do! This is a brilliant way to use up watermelon for more than just a fruit salad.
Super simple
- One Quarter of a watermelon
- One Teaspoon of Honey
- Half of a Lemon
- 100ml of cold water
- *Ice Cubes,*Lemon slices cucumber, Mint leaves.
- Dice up watermelon into 1" cubes, place in large jug with the juice of half a lemon, One teaspoon of honey and 100ml of cold water. Remove any seeds before blending!
- Blits until pink and smooth, you can always strain it after encase you've missed any seeds or pulp.
- Serve cold and enjoy!
- I sweeten mine extra for kids (or for the Ice lollies).
- *Ice Cubes,*Lemon slices cucumber, Mint leaves. For decoration.
- Add two teaspoon of sugar to two teaspoons of boiled water,stir until dissolved add to batch.
Watermelon-ade Ice lollies
There was nothing better than summer ice lollies, maybe it was because they were a once-a-year thing and they started the summer off properly, or maybe because they came in adorable colours but this year I’m doing ice lollies that are super tasty and great in style! The Manuka honey adds an extra citrus’y twist on a traditionally sweet Ice lolly.*Will be editing the pictures*
Super fun

- *Optional Two teaspoons of Sugar/2tbsp of boiling water for dessolving
- Dice up watermelon into 1" cubes, place in large jug with the juice of half a lemon, One teaspoon of honey and 100ml of cold water. Remove any seeds before blending!
- Blits until pink and smooth, you can always strain it after encase you've missed any seeds or pulp.
- Pour into ice lolly moulds and wait for at least 4 hours, the should be perfect at that point!
- Serve cold and enjoy!
- I definitely recommend adding the sugar to these, honey sweetens them but sugar really changes the flavour from a nice ice lolly to a sweet treat.
The SuperSmoothie
Sadly I don’t have any pictures for this, I created at Tom’s as he has a much better cupboard for fruits and veggies so more variety. As you know I’m not a HUGE fan of smoothies as they’re full of so much sugar but I really needed something smooth for my poorly throat this week, a smoothie fortified with super antioxidant rich Manuka Honey was a perfect choice.
- One Whole Banana,
- 3 Whole strawberries
- A small handful of Blueberries (8-12)
- Half an Avacado,
- 1 Teaspoon of Manuka Honey
- *50ml of cool water or milk alternative.
- *50ml of sweet green tea
- Place all of your ingredients into the blender, honey lastly as it will settle to the bottom otherwise.
- Pulse until smooth, strain if you like as the blueberries do have a firm skin but mine was fine as it is!
- Serve in a tall glass with a long straw or for an added extra leave out the milk/liquid and add in yoghurt, eat as a dessert!
- Liquid is essential for making this thin enough to drink easily but I've given you the choice again.
- I've added the green tea as an extra as it's brilliant for so many things, skin and organ health. So, it's brilliant for when you're feeling poorly but it doesn't add much as far as flavour to this drink.
- It's up to you to whether you include this ingredient!
I chose some fruits that are rich in antibacterial properties (just like the honey) and hopefully they’ll help heal my poorly throat. I’ve recently been in touch with a berry powder company, you add in extra nutrients by popping in these powders but that’s completely up to you, you could also add in a teaspoon of Myprotein if that’s what you’re into!
