This is my latest obsession, I’m not one for cheese really, but when I want it I need it! There’s something about cheese that you can’t replicate. No matter how much the vegan alternatives try, it just doesn’t taste the same, I’m sorry but it’s true! 

So I was browsing the internet, as you do, when I stumbled, literally.. on The Iron you‘s alternative to a grilled cheese sandwich.

Being on the Paleo diet, cheese is a big no-no but so is anything that has a process. I’m not really following it properly anyway, biscuits and nutella are on my weekly shopping list *slapswrist* but I still wanted something new to eat and grilled cheese sandwiches fit perfectly for ‘april-fools’ day.

What’s better than a pretend grilled cheese?
Not to mention, I can’t really digest wheat, so cauliflower bread has really changed how I can eat and how I can treat myself.I made a cauliflower pizza last year which I now eat every few months, it’s less indulgent but still it feels like a treat.

So.. I had this great recipe, but I don’t like just publishing them, I like to develop them and make it just that little bit healthier, because that’s what this site is for. “The Average joe who wants to make easy recipes, easier and healthier!”

So I adapted this little gem by cutting out some of the cheese and making it a little lighter.Cauliflower egg cheese basic ingredients

Using just 3 ingredients you can have an amazing tasting grilled cheese sandwich that will fool anyone!

 

Firstly, there are tonnes of these cauliflower cheese recipes out there, but they don’t all cater for the weight conscious or the less skilled in the kitchen. So I’ve really tried to keep this as basic as possible and as easy for anyone to re-create. Parmesan, in the smallest quantity (20g) cost £3.20, Mild strong cheese cost (250) £1.00.

I can pretend that I planned not to use the right equipment but actually I was at my mother-in-laws so had no access to cheese cloth or cheese.

 

 

Making things easier, healthier and cheaper.

  • Instead of expensive parmesan, you can use a milder-drier cheese, higher in fat but less on your wallet and easy to get hold of.
  • Instead of 50 grams of cheese, you can use 30g and add in a tsp of melted butter or oil.
  • Instead of using cheesecloth you can use kitchen paper or cloth.

So, even with the swap of the oil or butter you’re saving yourself the added cheese in the mix but by all means use the 50g of parmesan it won’t change the outcome.

A gluten free version of the classic grilled cheese sand which, I like to think of it as a tasty April fools joke. I suppose it's more just a tasty cheese sandwhich, perfect for those lazy sundays..

Ingredients
  1. 1 Head of Cauliflower
  2. 1 Egg
  3. 30g of Cheese (strong/dry)
  4. Season: Salt pepper.
Instructions
  1. Make it rain! Ok..not 'rain' but make it snow. Using a hand blender or base blender is best but if you have neither you can of course chop it by hand, grab a large tray to keep the bits together!
  2. Chop until as fine as possible, it should be so fine that it sticks to your fingers constantly and makes a tonne of mess in your kitchen. Let's just say, you'll know it's ready when you start to get annoyed at the cauliflower.
  3. Place your annoying snow into a large jug or bowl, cover and cook for 2 minutes on high until it steams. Once steaming, remove and place into a cheese-cloth or similar fabric.
  4. Wait until cool enough to squeeze, then squeeze the heck out of it. Put all your anger into it! You might find that visualising someones neck helps with this process. Squeeze until dry.
  5. In a separate bowl, whisk your egg add to your cauliflower snow, along with your salt, pepper,cheese and other seasonings. Mix it all up, it should be like a soft dough. Quarter your 'dough' and heap onto a lined baking tray.
  6. Flatten your dough into squares 3" x 3" squares, use a knife to make nice clean edges. It should be just thinner than a slice of bread and a tiny bit smaller in length too.(See pictures)
  7. Cook on GM 7 (220 Degrees) for 10-15 minutes, depending on the size of your 'bread'. It should come out firm and slightly coloured.
  8. Wait for them to be cool enough to handle, place the cheese on the side of your preference. I chose the underside to be my top half as they looked flatter and prettier, more bread like..if you will.
  9. You can either oven them again, to melt the cheese or pop them in a pan, cook until the 'bread' is toasted and your cheese is oozing out of the edges.
  10. Now, the hard part, are you cutting diagonally or straight across. Decisions Decisions!
Notes
  1. Why not slip in some grilled onions,chilli flakes,sauce or red peppers, try something new!

Note: Using fresh cauliflower is the best option, it has less water and is far more stable as a baked ingredient in bread replacements.

“but you’re a health and nutirionist blogger, why’re you eating cheese?” – because I want to?

but, in all seriousness I normally include a nutrition count with the protein and fiber here but because this isn’t ‘the healtheist’ recipe i’ve put on here It didn’t seem appropriate. Yes it’s a better alternative but it’s still not something I’d advise you eating regularly.

The thing is we shouldn’t stipulate how you eat and visa verse. This cheese sandwich isn’t healthy, it’s made with cheese, so we’re off to a bad start there..but it’s an alternative for being who can’t digest wheat.Just think of this as a change from the normal cheese sandwich, whilst it not be much healthier it provides a new idea for those who suffer with bread intolerances. Along with that, it’s made with cauliflower which adds vital fibre and nutrients into your diet so it’s not all bad…

Just choose your moments to ‘treat’ yourself.

If you’re into gluten free baking and would prefer to use bread, try this White Bread as it works great for a sliceable bread and it’s cheaper than some of the others too. If that’s not your cup of tea and you want an alternative cheese, try this vegan cheese. I’ve not tried it personally but I have vegan friends who buy this brand and love their mock-cheeses.

  1. Grilled cheese is delicious but I rarely eat it because of the calories and fats involved. I want to try the diet you’re on but I couldn’t find any meals that would suit our family so we’re still stuck on our meaty boring meal plans. Only because it’s a safe bet for our kids. Well since this is a healthier alternative to a grilled cheese I may have to give it a go, I’m not going to lie I’m a little nervous about the taste and I’m not sure if my toddlers will be fooled but I can only try! I may swap the cheddar for mozzarella I know it’s a little more expensive but that creamy texture is addictive and it’s a tiny weeny bit healthier x

    1. You don’t necessarily need to try the paleo diet or any sort of diet, just cut out as many processed foods as you can, feasibly for you family. If you want to try this recipe you should definately think about trying the cauliflower pizza before hand, it’s much simpler and the kids will love it too there’s also a sweet potato pizza recipe that’s just as simple and much tastier..in my honest opinion!

  5. Ok so even I want to try this and I am the worst at cooking anything. My mum and sister have been making cauliflower pizzas recently and loving them for slimming world, I think they would love this too

  7. I’m not overly keen on cauliflower but I must say, this looks and sounds delicious. Perhaps I should try it especially because I have a (undiagnosed – what I suspect) is a gluten allergy of some kind.

  9. Love this idea and also appreciate you not skirting around the fact that although it’s made with cauliflower, there’s still a lot of cheese in there so it isn’t the healthiest! The cauliflower looks just like bread!

    1. I know! I only took two snaps after it was cooked as I wanted to eat it whilst it was still hot! Gutted!
