Vanilla and almond milk chia- The Perfect Breakfast.

I am definitely late on the chia seeds trend but that just means I have a wave of new love for this little seed that people may have already forgotten.

Typically used to make a ‘pudding’ that is similar in texture to tapioca, it is more of a sweet breakfast treat. That being said I have seen people use these seeds raw and in milkshakes.

With their thirst for water they inflate to twice or three times their size in a matter of minutes, if you’re looking to trim down your tum they’re not for you. However, if you’re looking for a new super food that’s packing a punch of nutrients for few calories this wonder food is the one for you. 

With their ability to suppress any appetite I would say they’re a cupboard must have for the yo-yo dieter and snacker. They will crunch your cravings and boost your energy for a full morning. I have soo many wonderful recipes to come with these but for now, here’s my…

Four fruit wonder bowl!

This delicious treat is perfect chilled, or warmed up with cinnamon! Considering I’m new to chia I have had in in a variety of different ways. I have popped some in a banana smoothie and it was instantly thick, like ice cream – such a nice texture. I haven’t had a creamy texture in years! From paleo and now vegan diets It’s been a fun journey but it’s nice to return to that thick creamy ice cream.

1/2 cup of chia seeds

1 cup of almond milk*

1 tsp vanilla essence

1 Tsp Cranberries

1 Tbsp Blackberries 

1/2 sliced banana

1 shake of raspberry powder

Makes 6 portions

To a large container, preferably one with a lid. Add your chia seeds, milk (of preference) and vanilla essence, leave to sit for five hours or over-night! For my fruit bowl, I added some homemade blackberry jam to the bottom of the jar then poured in my thick chia pudding and topped with sliced banana, cranberries and a shake of raspberry powder!

With four fruits there’s no need for any added sugar, just enjoy this for it’s creamy sweet and healthy qualities and have a nice relaxed start to your day. Soaking these bad-boys over night make this a super quick treat for anyone to enjoy. Quicker than an egg and tastier than cereal!

Why not try? Dried banana for a delightful crunch or top it with muesli, hazelnuts, fresh fruit or a jam or fruit compote!

My sister recommended trying it warmed up with some cinnamon – maybe as autumn swings back round I’ll give that a try! This is, of course, a vegan recipe but you can try this with the milk of your choice, stay healthy & have a great week!

  4. It’s like chia seeds are everywhere now, there are so many different things people are adding, I didn’t come to making one recipe using them by now. 🙂

    1. I can’t believe it’s taken me so long to be honest with you, I saw them YEARS ago! It’s crazy to think that such a good ‘superfood’ hasn’t made it into our everyday shopping.

  5. Beautiful presentation, and so healthy too. I’m not very keen on chia seeds, something about the texture that I find offputting. What would be a good alternative to chia?

    1. It’s odd at first, I’m not one for custards and rice puddings either but I started putting it in my muesli instead of water or almond milk and you get the nutrition from the seeds and the same texture as eating muesli.
      If you still wanted to try the ‘bowl’ you could swap if for sweetened rice for a similar carby breakfast or just replace it all together by eating the fruit with a grain of your preference 🙂
