Simple Roasted Barbeque Sweet Potato Five ways!

It can be used in stews, soups, salads and as a main meal but the humble sweet potato is more then just a veggie. It’s a startch based carbohydrate that is packed full of energy! I have spoken about the benefits of sweet potato on the site before and created several sweet potato recipes because they’re amazing to work with so this comes as no surprise…

Barbeque Sweet Potato

  • 2 Sweet potatoes, Cubed
  • Gem Lettuce,
  • Red Cabbage,
  • Peppers, Mixed
  • Red Onion,
  • Spring onion,

Barbeque sauce;  Smoked Paprika, Tomato Puree, Spirit Vinegar, Sugar, Water, Salt, cumin, Gara masala, chilli flakes, Garlic and xanthan gum for thickener.

Add to: Cous cous, quinoa and in salad wraps but you could add this to curries & on top of a simple rice dish! I typically eat it as a lunch meal after my morning workout or on cardio days I eat it as a side dish with my main meal.

Not only is this gut friendly, with the inclusion of sweet potato which makes it perfect who suffer with IBS, it’s also Vegan and some-what Paleo (depending on how you follow the paleo diet). Sweet potatoes are a starchy carbohydrate; that means it can fuel your post workout hunger without sending your sugar and fats into over drive. #fuelup. 

This post isn’t really a recipe, as you can tell. It’s more of an idea spark to use up your leftovers and create new dishes. Sweet potatoes generally last only 7-11 days before they start to aerate and go mouldy, to get around this I tend to batch prepare sweet potato fries or chunks. You can precut them and freeze them for months, with fries I would recommend keeping them thick as they tend to hold water and go soggy. There are so many things you can do with sweet potato.
